Thank you for the reply. If you are currently setup with Office 365 the best option is to stay with the same platform, however you will need to take the necessary steps to migrate the email content.
This can be preformed by using an Outlook email client and exporting a PST backup file for each address.

The tier of email will depend on your needs. The first 2 tiers are for basic email hosting. The first package has 5GB of mail storage and the second package has 50GB
The third package, Business Premium comes with 2016 Office suites licenses for each user on that package if a user will need the Microsoft suite if it hasn't already been licensed by a third party.
The highest package comes with everything listed plus addons for encypted sending and archiving. This would be a great option to add a layer of extra security to emails that are communicating with sensitive information in the content.
